Country Style Meat Loaf
- 2 lb. ground meat (chuck, round or sirloin)
- 1 (10 oz.) pkg. frozen mixed vegetables
- 1 tsp. salt
- 1/2 tsp. pepper
- 2 Tbsp. parsley, minced
- 1 1/2 c. corn flakes
- 1 medium onion, chopped
- 1 can tomato soup
- 3 Tbsp. butter or margarine
- Combine meat, mixed vegetables (thawed), salt, pepper and parsley in a deep mixing bowl; mix well.
- Add salt, pepper, corn flakes and 1/2 of tomato soup (undiluted).
- Mix well to blend. Place 1/2 of the meat mixture in a buttered 6 x 16 x 2 1/2-inch baking dish; pack.
- Dot top with 1/2 of the butter.
- Place rest of meat mixture in baking dish.
- Dot with rest of butter and pour rest of soup over the top.
- In a preheated 375u0b0 oven, bake 1 hour. Remove.
- Let stand 15 minutes before slicing.
