Green Tomato Pie

  1. Quarter
  2. tomatoes,
  3. put
  4. through coarse grinder.
  5. Drain off excess
  6. liquid.
  7. Measure
  8. pulp to get 2 1/2 cups.
  9. Combine tomatoes,
  10. raisins,
  11. butter
  12. and
  13. vinegar
  14. in saucepan.
  15. Blend together sugar,
  16. cornstarch and spices.
  17. Add to tomato mixture and stir
  18. well.
  19. Cook
  20. over moderate heat, stirring constantly until thickened.
  21. Don't
  22. get too dry, add little of the tomato juice if it
  23. appears so.
  24. Spoon mixture in unbaked pie shell, cover with top crust, slit.
  25. Smooth small amount of cream over crust and sprinkle
  26. with
  27. little
  28. sugar and cinnamon. Bake in preheated oven (425u0b0) for 10 minutes.
  29. Reduce to 350u0b0, continue baking 20 to 25 minutes until golden brown.
