Hot Gourmet Deer Chili
- 2 1/2 lb. deer meat
- 1/2 lb. bacon ends
- 1 Tbsp. olive oil
- 5 large cloves garlic, minced
- 1 medium onion, chopped
- 2 (8 oz.) cans Contadina tomato sauce
- 5 c. water
- 1 c. Budweiser beer
- 1 (10 oz.) can Ro-Tel tomatoes with green chilies, diced
- 2 tsp. Louisiana red hot sauce
- 1 beef bouillon cube
- 9 Tbsp. chili powder
- 2 tsp. paprika
- 2 tsp. ground oregano
- 4 tsp. ground cumin
- 3 tsp. salt
- 3 tsp. ground red pepper
- 1 tsp. crushed red pepper
- 1 tsp. ground white pepper
- 1 tsp. ground black pepper
- 3 hot jalapeno peppers, diced with seeds
- 2 Tbsp. Heinz hot ketchup
- 20 crackers, finely ground
- Cube meat and
- grind
- with
- hamburger plate of electric grinder.
- In a large
- pot, heat olive oil and saute garlic for 1 minute.
- Add onion
- and
- ground
- meat.
- Cook
- until
- meat is done. Add next 17
- ingredients;
- bring
- to a boil.
- Cover and simmer 1 hour,
- stirring occasionally.
- Slowly stir in cracker meal.
- Let simmer 10 more minutes, stirring frequently.
- Serve hot with crackers, Fritos or French-style garlic bread.
