Hominy Casserole
- 4 slices bacon
- 2 large onions, chopped
- 1 green pepper, chopped
- 1 (4 oz.) can mushrooms, sliced and drained
- 1 (29 oz.) can hominy, drained
- 1 tsp. Worcestershire sauce
- 1 (10 oz.) can tomatoes with green chiles
- 1 tsp. salt
- 1 tsp. pepper
- 1 c. cheese, shredded
- Cook bacon in skillet until crisp.
- Drain; reserve drippings. Crumble bacon.
- Add onions and green pepper to drippings in skillet.
- Saute until tender.
- Stir in mushrooms, hominy, Worcestershire sauce, tomatoes and seasonings.
- Cook 20 to 30 minutes, over medium heat, stirring occasionally.
- Stir in bacon. Alternate layers of hominy and cheese in 2-quart casserole, ending with cheese.
- Bake, uncovered, 20 minutes at 350u0b0.
