Petite Broccoli Quiches
- 1 (3 oz.) cream cheese, softened
- 1/2 c. butter or margarine, softened
- 1 c. flour
- 3/4 c. chopped broccoli, thawed and drained
- 3/4 c. (3 oz.) shredded Swiss cheese
- 2 eggs, beaten
- 1/4 c. plus 2 Tbsp. half and half
- 3/4 tsp. salt
- Combine softened cream cheese and butter in a medium mixing bowl.
- Beat at medium speed of an electric mixer until smooth. Add flour and beat at medium speed until smooth.
- Shape pastry into 24 (1-inch) balls.
- Place each ball into an ungreased miniature (1 3/4-inch) muffin pan.
- Press dough onto bottom and sides to form shells.
- Set aside.
- Combine chopped broccoli and remaining ingredients in a medium bowl, stirring well.
- Spoon broccoli mixture evenly into shells.
- Bake at 400u0b0 for 25 minutes or until set and lightly browned.
- Yield: 2 dozen.
