Low-Fat Oat Bran Muffins

  1. Preheat oven to 425u0b0.
  2. Spray or line 12 muffin cups.
  3. Stir together oat bran, flour, baking powder, cinnamon and nutmeg.
  4. In small bowl, whisk egg whites until frothy, then stir in remaining ingredients.
  5. Add all at once to oat bran flour mixture, stirring just until dry ingredients are moistened.
  6. Spoon batter into muffin cups.
  7. Bake for 15 to 17 minutes.
  8. Makes 12 muffins.
