Diabetic Cake
- 1/2 c. margarine, melted
- 1 Tbsp. liquid sweetener
- 2 c. self-rising flour
- 1 c. chopped nuts or Grape-Nuts cereal (optional)
- 1/4 tsp. clove
- 1 c. chopped dried dates
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 2 eggs
- 1 tsp. cinnamon
- 1 1/2 c. applesauce, unsweetened pineapple, crushed, or mashed bananas
- Cream margarine, egg and sweetener.
- Add baking powder, spices, flour and (I like pineapple the best) applesauce or pineapple.
- Mix well.
- Fold in dates and nuts.
- (I leave nuts out to save on calories.)
- Bake in loaf pan at 300u0b0 for 30 to 45 minutes.
- Spray pan well before pouring batter in pan.
- Cool 10 minutes before removing from pan.
- This cake must be kept refrigerated.
