Blueberry Muffins
- 1 c. superfine sugar
- 1 c. milk
- 1 1/3 c. all-purpose flour
- 3/4 tsp. cinnamon
- 1/2 tsp. vanilla
- 1 c. fresh or frozen blueberries
- 1/2 stick margarine
- 1 egg
- 2 tsp. baking powder
- 3/4 tsp. nutmeg
- 1/4 tsp. salt
- Preheat oven to 375u0b0.
- Prepare muffin tin with paper liners. In medium bowl, cream sugar and margarine on low speed of electric mixer until smooth.
- Add milk, egg, 2/3 cup flour, baking powder, cinnamon, nutmeg, vanilla and salt and mix just until thoroughly blended.
- Gently mix in remaining 2/3 cup flour (batter should still be lumpy).
- Fold in the blueberries.
- Fill muffin tin liners 3/4 full (muffins will rise 1-inch above pan).
- Bake until golden brown, 20 to 30 minutes.
- Makes 12 muffins.
