Mother'S Lemon Snow Cake
- 2 c. sugar
- 2 c. all-purpose flour
- 1/2 c. cornstarch
- 2 tsp. baking powder
- 1/4 tsp. salt
- 3/4 c. butter (at room temperature)
- 1 c. milk
- whites of 7 eggs (at room temperature)
- 1 tsp. vanilla
- Sift the sugar, flour and cornstarch before measuring.
- Then sift the measured cornstarch, flour, baking powder and salt together 4 times.
- Cream the butter thoroughly and add the sugar a little at a time, creaming it in well.
- Add the dry ingredients alternately with the milk.
- Beat the egg whites into stiff peaks. Fold into the creamed mixture.
- Pour into 3 greased and floured layer cake pans and bake in a 350u0b0 oven for 25 minutes.
- Cool in pans for 15 minutes.
- Remove from pans and finish cooling.
- Put the layers together with filling.
