Turban Fillets
- 4 (4 oz.) flounder fillets
- salt and pepper
- 8 medium chopped shrimp
- 4 Tbsp. backfin crabmeat
- 2 scallions, chopped
- 3 or 4 Tbsp. grated Mozzarella cheese
- melted butter
- Hollandaise Sauce
- paprika
- Sprinkle fillets with salt and pepper.
- Set aside.
- Mix shrimp, crabmeat, scallions and cheese and spread on fillets.
- Roll fillets into a turban and secure with wooden picks.
- Place turbans on end in a well-greased baking dish.
- Brush generously with melted butter.
- Bake at 350u0b0 for 15 to 20 minutes or until fish flakes easily when tested with a fork.
- Remove from oven and drain off all liquid.
- Top the seafood with your favorite Hollandaise Sauce and sprinkle with paprika.
- (Individual dishes work best for this recipe.)
- Serves 4.
