Mexican Beef Bake
- 1 lb. ground beef
- 2 Tbsp. chili powder
- 1 c. mild taco sauce
- 1 (4 oz.) can chopped green chiles, drained
- 1/2 tsp. salt
- 1 (12 oz.) can whole corn, drained
- 1/4 c. sliced onions
- 1 c. black olives, sliced (pitted)
- 1 c. grated Monterey Jack cheese (4 oz.)
- 1 c. tortilla chips
- 1/2 c. sour cream
- 1 large tomato, chopped
- Heat oven to 400u0b0.
- Brown hamburger and drain off fat.
- Stir in chili powder; cook 1 minute.
- Remove from heat.
- Stir in taco sauce, chiles and salt.
- In small bowl, combine corn and 1/2 onions.
- In casserole, layer half the corn mixture, half the beef mixture, half the olives and half the cheese.
- Repeat layering. Bake, covered, for 20 minutes until heated and cheese is melted. Garnish with tortilla chips, sour cream, tomato and remaining onions to serve.
