Southwest Roll-Ups

  1. Place the first 8 ingredients and 1/2 cup cheese in a food processor; blend until smooth.
  2. Spread evenly over tortillas.
  3. Roll up and place seam side down in a greased 13x9x2 baking dish.
  4. Cover and bake for 20 minutes or until heated through.
  5. Sprinkle with remaining cheese; let stand until cheese melts.
  6. Serve with sour cream and salsa if desired.
  7. Yield: 10-12 servings.
