Mexican Meat Loaf
- 2 to 3 lb. ground beef
- 1 medium onion, chopped
- 1 (4 oz.) can chopped green chilies
- 1 clove garlic, minced
- 1 can chicken with rice soup
- 1 can mushroom soup
- 4 oz. tomato paste
- 2 (8 oz.) jars Ortega taco sauce
- salt to taste
- pepper to taste
- 12 flour tortillas
- 4 oz. cream cheese
- 1 1/2 c. grated Cheddar cheese
- Brown ground beef in skillet, stirring until crumbly; drain. Add the next 9 ingredients, mixing well.
- Simmer for 5 minutes. Layer 1/2 the tortillas and ground beef mixture in a 9 x 13-inch baking pan.
- Arrange small slices of cream cheese over beef mixture.
- Top with remaining tortillas, ground beef mixture and grated Cheddar cheese.
- Bake, covered, at 350u0b0 for 35 minutes.
