Fried Pies(Berniece Harbaugh'S Recipe)
- 5 c. flour
- 4 tsp. baking soda
- 2 tsp. salt
- 8 Tbsp. sugar
- 2/3 c. shortening
- 2 eggs
- 1 large can evaporated milk
- fruit or pudding
- shortening (for deep frying, add 2 Tbsp. vinegar; this keeps shortening from soaking into pie crust)
- Sift together flour, baking soda, salt and sugar in a large bowl.
- Add the shortening and cut into flour mixture.
- Add milk and slightly beaten eggs.
- Chill overnight.
- Roll dough out thin to avoid being tough.
- Don't handle dough too much or it will shrink. Cut a circle the size of a pie plate.
- Be sure to lift dough before cutting.
- Fill with fruit or pudding.
- (Dried fruit makes easy to handle while eating.)
- Place fruit on 1/2 side of the circle.
- Wet edges with a little water.
- Fold over and seal edges.
- Fry in deep fat at 325u0b0 until golden brown on both sides.
- Makes about 40 pies.
