Crispy Oven-Fried Catfish

  1. Preheat oven to 400u0b0F.
  2. Spray a baking sheet with vegetable oil cooking spray.
  3. Sprinkle fish on both sides with Cajun seasoning.
  4. In a small mixing bowl, combine egg substitute and skim milk.
  5. Place cornflake crumbs on a plate.
  6. One at a time, dip catfish fillets into egg mixture, then roll in cornflake crumbs.
  7. Dip and roll fillets again.
  8. Place on baking sheet.
  9. Place baking sheet on oven's bottom shelf.
  10. Bake at 400u0b0F for 20 minutes.
  11. Reduce heat to 350u0b0F and bake for 5 more minutes or until crust is golden and fish flakes easily.
