Hawaiian Chicken
- 2 1/2 lb. frying chicken, cut up
- 1 c. flour
- 1/2 tsp. salt
- 1/4 tsp. paprika
- 1/8 tsp. pepper
- 1/4 c. butter
- 3/4 c. unsweetened pineapple juice
- 1/4 c. brown sugar, packed
- 3 Tbsp. onion, finely chopped
- 1/2 tsp. thyme
- 1/4 tsp. salt
- Combine flour, 1/2 teaspoon salt, paprika and pepper.
- Coat chicken in flour mixture.
- Heat oven to 350u0b0.
- Put butter in a 13 x 9 x 2-inch baking pan and melt.
- Put floured chicken in pan, skin side down.
- Bake for 30 minutes.
- Mix together the pineapple juice, brown sugar, onion, thyme and 1/4 teaspoon salt.
- Turn chicken when done baking; pour mixture over the chicken.
- Bake for 30 minutes; garnish with pineapple slices the last 5 minutes.
- Makes 4 to 5 servings.
