Christmas Fruitcake Muffins
- 1 1/2 c. all-purpose flour
- 1/4 c. brown sugar
- 1 Tbsp. baking powder
- 1/4 tsp. salt
- 1 lightly beaten egg
- 1/2 c. milk
- 1/2 stick unsalted, melted butter
- 1/2 c. diced red and green candied cherries
- 1/2 c. mixed, diced candied pineapple
- 1/2 c. seedless raisins
- 2 tsp. grated lemon rind
- 2 tsp. grated orange rind
- Preheat oven to 400u0b0.
- In large bowl, mix flour, sugar, baking powder and salt.
- In separate bowl, stir together the egg, milk and butter, then stir them into the dry ingredients to make a lumpy batter.
- Fold in the remaining ingredients.
- Spoon the batter into greased muffin cups, filling 2/3 full.
- Bake until well risen, golden and a thin wooden toothpick inserted in center comes out clean, approximately 25 to 30 minutes.
