Cucumber Mousse
- 1 1/2 c. boiling water
- 1 large pkg. lime Jell-O
- 1 small pkg. lemon Jell-O
- 1 tsp. salt
- 1/3 c. white vinegar
- 1 1/2 c. sour cream
- 3/4 c. mayonnaise
- 3 c. grated, peeled cucumber
- 2 Tbsp. chopped green onion
- Pour
- boiling
- water
- over
- Jell-O
- and stir until dissolved. Add
- salt
- and
- white
- vinegar.
- Chill
- until mixture begins
- to thicken.
- Beat with mixer until mixture is foamy, 2 to
- 3 minutes.
- Fold
- in
- or beat at low speed with mixer the sour cream
- and
- mayonnaise.
- Add
- cucumber and onion, mixing thoroughly.
- Place in well-greased 2 quart mold or 9 x 12-inch pan.
- Chill at least 2 hours.
- Garnish with cucumber slices so guests won't mistake it for lime dessert.
- Serves 10.
