Seafood Pasta Sauce
- 4 Tbsp. olive oil
- 2 onions, minced
- 4 cloves garlic, minced
- 1 c. dry white wine
- 4 (28 oz.) cans peeled tomatoes
- 4 tsp. fresh basil or 1 1/4 tsp. dried
- 1 Tbsp. oregano
- 4 tsp. chopped parsley
- 4 cans chopped clams
- 2 lb. scallops, quartered (if large)
- 2 lb. shrimp, peeled and deveined
- pepper to taste
- Saute onion and garlic in olive oil.
- Pour in wine and cook 2 minutes.
- Chop tomatoes.
- Add tomatoes and their juices, basil, oregano and parsley.
- Cook on medium-high heat for 5 minutes, then reduce to a simmer.
- Cook 30 to 40 minutes or until slightly thickened.
- Add seafoods.
- Cover and cook until seafood is just firm, about 3 minutes.
- Taste and adjust seasonings.
- Add pepper to taste.
