Uncle Bob'S Gumbo
- 1/3 c. bacon grease
- 1/2 c. flour
- 1/4 c. green onion tops
- 1/4 c. green peppers
- 1/3 c. celery
- 2 c. chicken bouillon
- 1 c. hot sauce (picante)
- 2 cans tomato sauce
- 1/4 c. Worcestershire sauce
- 1 tsp. minced onion
- 1 tsp. minced garlic
- 1/4 tsp. file
- 1/4 tsp. thyme
- 1/2 tsp. tarragon
- 1/2 tsp. basil
- 1/4 tsp. black pepper
- 1/4 tsp. parsley
- 1/4 tsp. Accent
- Brown flour in grease; simmer for 30 minutes until browned. Saute vegetables; set aside.
- Add remaining ingredients to flour mixture; simmer for 1 hour.
- Add shrimp and vegetables.
- Serve over rice.
