Seafood Gumbo

  1. In a large pot over medium heat brown flour in oil until dark brown (not burned), stirring constantly.
  2. Add onions, peppers and celery and saute until tender.
  3. In a large bowl add tomatoes crushed up and water.
  4. Season to taste.
  5. Add to roux-vegetable mixture.
  6. Add consomme and okra and bring to a boil.
  7. Then reduce heat to simmer for 30 minutes.
  8. Add shrimp; bring back to a boil for 2 to 3 minutes.
  9. Reduce back to medium heat for 15 minutes. Then add crabmeat and simmer for 5 minutes, stirring gently.
  10. Turn off burner and cover with lid.
  11. Serve with rice.
