Rice And Chicken
- 1 chicken, boiled (unsalted), deboned and chipped up (reserve broth; set aside)
- 1/2 stick margarine or butter
- 1 box chicken flavored Rice-A-Roni
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 can cream of chicken soup
- 1 (8 oz.) sour cream
- Saute chopped onion and bell pepper in margarine. Strain out pepper and onion; set aside. Measure out 2 tablespoons of the margarine the onion and pepper were sauted in and put into a large frying pan. Heat margarine and add DRY Rice-A-Roni, cooking until light brown. Add 2 3/4 cups chicken broth and the flavor package which was included in the Rice-A-Roni. Add the chipped chicken, pepper, onions, sour cream and cream of chicken soup. Mix well, then heat, but do not boil. Pour mixture into a baking dish and bake at 350u0b0 for 35 minutes. During the last 5 to 10 minutes of baking, top casserole with Velveeta cheese.
