Baked Cheese & Garlic Grits
- 4 cups water
- 1/2 teaspoon kosher salt
- 1 cup quick-cooking grits (not instant!)
- 1 1/2 cups shredded sharp cheddar cheese
- 1/4 cup unsalted butter
- 1/2 cup whole milk
- 1 garlic clove, minced
- 2 large eggs, beaten
- Bring the water and salt to a boil.
- Stir in the grits.
- Cook until the grits are done.
- Remove from the heat and add the next 4 ingredients; stir until the cheese and butter has melted.
- Add a very small amount of grits to the eggs and stir well.
- Add a little more and stir well again.
- The pour this mixture back into the grits and mix well.
- Pour the mixture into a greased 2 quart casserole dish.
- Bake at 325u0b0F for 1 hour.
- NOTE: You can add chopped green or red bell pepper, green chile, or jalapenos to the mixture for a kick.
