Oatmeal Bread

  1. Place oats in bowl, pour boiling water over it; add 1/4 cup brown sugar and milk.
  2. When mixture is only warm, crumble in yeast.
  3. Sift and measure 2 cups flour, add and beat smooth.
  4. Let stand in a warm place until light and bubbly.
  5. Stir in salt, melted margarine and other 1/4 cup brown sugar.
  6. Sift, measure and add 3 1/2 to 4 cups flour.
  7. Knead until smooth.
  8. Cover closely or grease top.
  9. Let stand until double in bulk.
  10. Punch down.
  11. When light again, form into loaves.
  12. Place in well-greased pans.
  13. Brush tops with egg white (beaten slightly) and sprinkle quick oats over loaves.
  14. Let stand until double in bulk.
  15. Bake at 350u0b0 to 375u0b0 for 55 to 60 minutes.
  16. Remove from pans at once.
