Oatmeal Bread
- 2 c. quick oats
- 1 pt. boiling water
- 1/2 c. brown sugar
- 1/2 c. cold milk
- 5 1/2 to 6 c. flour
- 2 tsp. salt
- 1 Tbsp. melted margarine
- 2 cakes yeast
- Place oats in bowl, pour boiling water over it; add 1/4 cup brown sugar and milk.
- When mixture is only warm, crumble in yeast.
- Sift and measure 2 cups flour, add and beat smooth.
- Let stand in a warm place until light and bubbly.
- Stir in salt, melted margarine and other 1/4 cup brown sugar.
- Sift, measure and add 3 1/2 to 4 cups flour.
- Knead until smooth.
- Cover closely or grease top.
- Let stand until double in bulk.
- Punch down.
- When light again, form into loaves.
- Place in well-greased pans.
- Brush tops with egg white (beaten slightly) and sprinkle quick oats over loaves.
- Let stand until double in bulk.
- Bake at 350u0b0 to 375u0b0 for 55 to 60 minutes.
- Remove from pans at once.
