Corned Beef Loaf
- 1 1/2 Tbsp. gelatin
- 1/2 c. cold water
- 1 can English peas and liquid
- 3 hard-boiled eggs, chopped
- 1/2 c. chopped celery
- 1/2 Tbsp. chopped green peppers
- 1 tsp. chopped onion
- 1/2 c. mayonnaise
- 1 small can evaporated milk
- 1/2 tsp. salt
- 2 Tbsp. vinegar
- dash of Tabasco
- 1 can corned beef
- Dissolve gelatin in cold water.
- Heat peas and liquid; add to gelatin.
- Set aside.
- Mix eggs, celery, green pepper and onion together and add mayonnaise, milk, salt, vinegar and Tabasco. Then add to peas and gelatin mixture; mix well and add corned beef.
- Put into dish or pan lined with waxed paper.
- Cover and chill for at least 2 hours.
- Cut into squares and serve on lettuce as main dish.
- Serves 8.
