Caesar Salad
- 1 to 1 1/2 Tbsp. anchovy paste
- 2 to 3 garlic cloves
- 1/4 tsp. salt
- 1/4 c. olive oil
- 1 Tbsp. lemon juice
- 1 tsp. Dijon mustard
- 2 dashes Worcestershire sauce
- 1 egg yolk
- 3 Tbsp. freshly grated Parmesan cheese
- romaine lettuce
- freshly ground pepper
- additional grated Parmesan cheese
- croutons
- Whisk together the first 8 ingredients.
- Stir in freshly grated Parmesan cheese.
- Place thoroughly dried lettuce in a large bowl (tear leaves horizontally across spine) and toss with the dressing.
- Season generously with pepper; garnish with croutons and sprinkle with additional grated Parmesan cheese on top.
