Zucchini Relish

  1. Put zucchini, onions, carrots and peppers through food grinder using medium blade.
  2. Sprinkle with salt.
  3. Let stand overnight (I let stand about 3 to 4 hours).
  4. In morning, drain and rinse well with cold water.
  5. Mix together the remaining ingredients.
  6. Bring to boil in a large kettle.
  7. Add the ground vegetables, then simmer for 30 minutes.
  8. Ladle into hot jars. Makes 7 pints.
