Zucchini Relish
- 10 c. zucchini, ground
- 4 large onions, ground
- 4 large green peppers, ground
- 4 large red peppers, ground
- 2 1/2 c. cider vinegar
- 4 c. sugar (I use 1/2 brown)
- 1/2 c. salt
- 2 carrots, ground
- 2 Tbsp. cornstarch
- 1 tsp. turmeric
- 1 tsp. nutmeg
- 2 tsp. celery seed
- 1/4 tsp. black pepper
- 1 tsp. dry mustard
- Put zucchini, onions, carrots and peppers through food grinder using medium blade.
- Sprinkle with salt.
- Let stand overnight (I let stand about 3 to 4 hours).
- In morning, drain and rinse well with cold water.
- Mix together the remaining ingredients.
- Bring to boil in a large kettle.
- Add the ground vegetables, then simmer for 30 minutes.
- Ladle into hot jars. Makes 7 pints.
