Honeymoon Chicken And Biscuits
- 1 cup red onion, chopped
- 1/2 cup butter, divided
- 10 1/2 ounces chicken broth
- 1/4 cup dry sherry or 1/4 cup water
- 1 cup flour, divided
- 1 teaspoon poultry seasoning
- 2 1/2 cups chopped chicken breasts, cooked
- 10 ounces frozen vegetables
- 3/4 cup quick-cooking oats
- 2 teaspoons baking powder
- 1/2 cup nonfat milk
- 1 egg white
- 1 tablespoon maple syrup
- Cook onion in 2 tb butter in a skillet over medium heat, about 3 minutes. Stir togather broth, sherry or water, 1/4 cup flour and seasonings and add to skillet. Cook 3 minutes or until thickened. Stir in chicken and vegetables. Pour into lightly grease 2 quart baking dish. Combine remaining 3/4 cup flour, oats and b.powder. Cut in remaind butter until crumbly. Stir in milk, egg white and syrup until moistened. Drop by 1/4 cupfuls onto chicken mixture. Bake @ 425 about 30 minutes. Enjoy!
