Old Fashioned Jelly Roll

  1. Break the eggs into a bowl; warm to lukewarm without drying out.
  2. Preheat oven to 400u0b0.
  3. Beat the eggs with the baking powder and salt until thick and very pale.
  4. Gradually beat in the sugar; continue to beat until thick.
  5. Beat in the vanilla.
  6. Sift the flour twice; fold into the egg mixture.
  7. Spread the mixture over a 10 x 15-inch jelly roll pan that has been greased, lined with wax paper and greased again.
  8. Bake for 12 to 15 minutes, or until golden. Turn out onto a cloth towel sprinkled with 10x sugar.
  9. Peel off paper.
  10. Roll up from the long side, enclosing the towel.
  11. Cool on a rack.
  12. When cake is cool, unroll, spread with preserves and reroll without the towel.
  13. Serve in slices.
  14. Makes 10 servings.
