Spinach And Bacon Quiche(Serves 6 To 8)
- 8 or 9-inch deep baked shell
- 10 oz. (1 pkg.) fresh spinach (I have used 1 can spinach dried between paper towels)
- 2 Tbsp. butter or oleo
- 2 Tbsp. minced onions
- 6 crisp strips cooked bacon, dried between paper towels
- 1/2 c. coarse grated Swiss cheese (cheese of choice)
- 3 large eggs or 6 small eggs, plus milk or cream to make 1 1/2 c. liquid
- salt and pepper
- garlic, minced (1 Tbsp. fresh)
- nutmeg (pinch into custard mix; optional)
- Preheat oven to 375u0b0.
- Prebake shell.
- Cook bacon crisp and drain.
- Saute onions slowly in the butter or oleo (I use 2 tablespoons bacon drippings) and onions until almost tender.
- Add the minced garlic and continue until the garlic begins to change color.
- Strew the grated Swiss cheese (1/4 cup) in bottom of shell. Break up the pieces of bacon and strew over the Swiss cheese. Sprinkle a little grated Swiss over the bacon.
