Scrambled Eggs Deluxe En Croute

  1. Make scrambled eggs:
  2. In medium bowl, combine eggs, milk, salt and pepper.
  3. With rotary beater, beat just until combined.
  4. Heat 2 tablespoons butter in large skillet.
  5. Pour in egg mixture.
  6. Cook over low heat.
  7. As eggs start to set on bottom, scramble.
  8. Add cheese and chives; cook until eggs are moist and shiny but no longer runny.
  9. Split bread in 1/2 lengthwise.
  10. With fork, scoop some of bread out from inside of loaf.
  11. Brush inside of loaf after scooping with melted butter.
  12. Spoon eggs into hot bread and serve. Makes 10.
