Scrambled Eggs Deluxe En Croute
- 18 eggs
- 3/4 c. milk
- 1 1/4 tsp. salt
- dash of pepper
- 2 Tbsp. butter
- 3 (3 oz. each) pkg. chive cream cheese, cut into 1/2-inch cubes
- 2 Tbsp. fresh chives, chopped
- braided loaf bread
- 1/4 c. butter, melted
- Make scrambled eggs:
- In medium bowl, combine eggs, milk, salt and pepper.
- With rotary beater, beat just until combined.
- Heat 2 tablespoons butter in large skillet.
- Pour in egg mixture.
- Cook over low heat.
- As eggs start to set on bottom, scramble.
- Add cheese and chives; cook until eggs are moist and shiny but no longer runny.
- Split bread in 1/2 lengthwise.
- With fork, scoop some of bread out from inside of loaf.
- Brush inside of loaf after scooping with melted butter.
- Spoon eggs into hot bread and serve. Makes 10.
