Corn Bread Dressing

• 4 Tbsp. butter
• 2 large onions, chopped
• 1 stalk celery, chopped to make 1/2 cup
• 1/2 tsp. thyme
• 3 c. corn bread crumbs
• 3 c. biscuit crumbs
• 4 eggs, beaten
• 2 1/2 to 3 c. chicken stock (preferably fresh)
• 1 Tbsp. chopped fresh sage
• salt and pepper to taste
• 2 Tbsp. poultry seasoning

1. A good many husbands are utterly spoiled by mismanagement. Some women go about it as if their husbands were bladders, and blow them up.
2. Others keep them constantly in hot water.
3. Others let them freeze by their carelessness and indifference.
4. Some keep them in a stew, by irritating ways and words.
5. Others roast them. Some keep them in a pickle all their lives.
6. It cannot be supposed that any husband will be tender and good, managed in this way, but they are really delicious when properly treated.
