Abuelo'S Cilantro Lime Soup

  1. For Chicken :.
  2. Remove skin and wings from chicken; cover with water and add chicken base.
  3. Cook chicken over medium heat for approximately 1-1/2 hours.
  4. Remove chicken and let cool; bone chicken and chop meat into small pieces.
  5. Reserve broth.
  6. While the chicken is cooling, start the soup:.
  7. Place canola oil in pan and heat.
  8. Add onion, tomato, garlic, oregano, chili powder, salt and chilies and saute until onions are translucent.
  9. Add corn, chicken, reserved broth, additional chicken base and hominy.
  10. Bring to a boil and cook for 15 minutes.
  11. Add lime juice and remove from heat.
  12. Add chopped cilantro.
  13. Serve hot.
