Grandma'S Tea Cakes
- 1 c. shortening
- 3 eggs
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1 or 1 1/4 tsp. almond extract
- 1 1/2 c. sugar
- 4 c. all-purpose flour
- 1 tsp. baking soda
- 1/4 c. buttermilk
- sugar (optional)
- Cream shortening in a large bowl.
- Gradually add 1 1/2 cups sugar.
- Beating well at medium speed on an electric mixer, add eggs, one at a time.
- Beating after each, combine flour, baking powder, baking soda and salt.
- Add to creamed mixture alternately with buttermilk.
- Mix well and stir in extract.
- Cover and chill for 1 hour.
- Roll dough int 1/4-inch thickness on a floured surface.
- Cut with a 2 1/2-inch round cookie cutter.
- Place on a greased cookie sheet and bake at 350u0b0 for 15 minutes or until edges begin to brown.
- Sprinkle with sugar if desired.
- Cool. Yields 4 dozen.
