Bon Appetit Swedish Oatmeal Pancakes
- 4 cups rolled oats
- 1 cup all-purpose flour
- 1/4 cup sugar
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 1 pinch salt
- 4 cups buttermilk
- 4 eggs, beaten
- 1/2 cup butter, melted
- 2 teaspoons vanilla
- additional butter, for cooking
- Combine oats, flour, sugar, baking soda, baking powder and salt in large bowl.
- Blend in buttermilk, eggs, melted butter and vanilla and mix well. Let batter stand 30-45 minutes. Batter will thicken; do not blend in additional liquid.
- Keat griddle or large skillet over medium heat; butter griddle. Add batter by spoonfuls and cook, turning once, until pancakes are puffed and browned on both sides.
- Serve immediately with syrup or fruit.
