Pasta Of The Grape Harvest
- 5 lbs red seedless grapes, stem & wash
- 1 1/2 cups dry red wine
- 1 teaspoon anise seed, crushed
- 1/8 teaspoon ground cinnamon
- 2 whole cloves
- 1 orange, zest of, shredded
- 1 pinch salt
- 1/4 teaspoon black pepper
- 1 lb spaghetti or 1 lb linguine
- 3/4 cup pistachio nut, shelled and chopped (optional)
- 1/4 lb ricotta cheese (optional)
- Chop grapes in a food processor.
- Pour into a large pan with the wine, spices, zest and salt and pepper.
- Bring to a boil and cook, uncovered, for 20 minutes or until reduced by 1/2 stirring often.
- Strain & Set aside.
- Cook pasta as directed on package until al dente and drain.
- Toss the hot pasta with the grape sauce.
- Plate into individual servings and top (if desired) with a dollop of ricotta and a sprinkling of nuts.
