Strawberry Dessert
- 40 to 50 crushed vanilla wafers
- 1/2 c. sugar
- 1/2 stick melted butter
- 8 oz. pkg. cream cheese (room temperature)
- 2 eggs
- 1/2 c. sugar
- 1 tsp. lemon juice
- 1 small pkg. strawberry jello
- 1 1/3 c. sugar
- 5 Tbsp. cornstarch
- 1 1/2 c. water
- 1 qt. fresh strawberries
- whipped cream
- Mix the vanilla wafers, 1/2 cup sugar and melted butter and pat into 9 x 13-inch pan.
- Reserve a few crumbs for top.
- Mix cream cheese, 2 eggs, 1/2 cup sugar and 1 teaspoon lemon juice well.
- Pour over crust.
- Bake at 300u0b0 until firm on top (approximately 15 minutes).
- Mix jello, 1 1/2 cups sugar, 5 tablespoons cornstarch and 1 1/2 cups water.
- Cook and cool.
- Add 1 quart fresh strawberries.
- Pour over cooled cheese layer.
- Put Cool Whip over all.
- Top with crumbs.
- Chill a few hours before serving.
