Chicken Breasts Romano
- 1/3 c. flour
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 3 whole chicken breasts, split and skinned
- 2 Tbsp. oil
- 1/4 c. minced onions
- 2 c. tomato juice
- 2 Tbsp. Romano or Parmesan cheese, grated
- 1 Tbsp. sugar
- 1/2 tsp. salt
- 1/2 tsp. basil leaves
- 1/2 tsp. vinegar
- 1 (4 oz.) can mushrooms, drained
- 1 Tbsp. parsley
- 1/2 c. Romano or Parmesan cheese, grated
- hot spaghetti

- Combine first three ingredients.
- Dredge chicken, brown in oil and drain on paper towel.
- Pour off all but one tablespoon of pan drippings.
- Saute onions in reserved drippings until tender.
- Add next eight ingredients, stirring.
- Return chicken.
- Cover and simmer 45 minutes.
- At serving time, sprinkle chicken with the cheese.
- Serve over spaghetti and garnish with parsley.
