Hog-Heaven Chili
- 1 lb. ground beef
- 1/2 lb. pork sausage ("hot")
- 1 medium onion, chopped
- 1 clove garlic, slivered
- 1 (10 oz.) can tomato paste
- 1 (13 oz.) can tomatoes and chilies
- 1 (16 oz.) can crushed tomatoes
- 1 (16 oz.) can pinto beans
- 2 (16 oz.) cans kidney beans
- 2 (16 oz.) cans water
- 1 Tbsp. chili powder
- 2 tsp. salt
- 2 Tbsp. sugar
- 2 Tbsp. white vinegar
- dash of pepper
- Brown beef, sausage, onion and garlic until meat is crumbly. Drain off grease. Place mixture in 8-quart pot. Add remaining ingredients. Bring to a boil, stirring often, then simmer for 3 hours. Add more water as moisture cooks down.
- Serve topped with grated Cheddar cheese and a dollop of sour cream. Serves 12.
