Fat-Free Banana Surprise Muffins
- 1 c. flour
- 1/2 c. quick oats
- 1/2 c. sugar
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. cinnamon (optional)
- 2 Egg Beaters or 4 egg whites (1/2 c.)
- 2 large bananas, mashed
- 2/3 c. 1/2% or skim milk
- 1/3 c. light corn syrup
- 1/4 c. all-fruit apricot jam
- Spray 14 to 16 muffin cups with a nonfat cooking spray.
- In a medium-sized bowl combine flour oats, sugar, baking power, baking soda and cinnamon.
- In a large bowl whisk Egg Beaters.
- Stir in mashed bananas, milk and corn syrup.
- Add flour mixture; stir until blended.
- Spoon into muffin cups.
- Top each with about 1/2 teaspoon of jam each.
- Bake at 400u0b0 for 22 to 24 minutes.
- Cool 5 minutes in pan.
