Soul O Gratin
- 2 Tbsp. margarine or butter
- 2 Tbsp. all-purpose flour
- 1 tsp. chicken bouillon granules
- dash of ground nutmeg
- 1 c. milk
- 2/3 c. shredded Cheddar cheese
- 1 pkg. (10 oz.) frozen chopped broccoli, thawed and well drained
- 1 Tbsp. lemon juice
- 1 lb. sole fillets
- 1/2 tsp. salt
- 2 Tbsp. grated Parmesan cheese

- Place margarine in 4-cup measure.
- Microwave, uncovered, on High 20 to 30 seconds or until melted.
- Stir in flour, bouillon granules and nutmeg; stir in milk.
- Microwave, uncovered, 3 to 4 minutes, stirring every minute, until thickened; stir in Cheddar cheese.
- Spread broccoli in square dish, 8 x 8 x 2-inches; sprinkle with lemon juice.
- If fish fillets are large, cut into 4 serving pieces; pat dry.
- Arrange fish, thickest parts to outside edges, on broccoli; sprinkle with salt.
- Spread sauce over fish and broccoli. Cover with waxed paper and microwave on High 7 to 9 minutes, rotating dish 1/2 turn after 4 minutes, until fish flakes easily with fork.
- Let stand, covered, 3 minutes.
- Sprinkle with Parmesan cheese and paprika.
