Cashew Chicken
- 2 Tbsp. margarine
- 16 oz. chicken
- 1 Tbsp. soy sauce
- 2 to 3 oz. cream cheese
- 2 Tbsp. margarine
- 2 c. broccoli (optional)
- 1 large onion (large pieces)
- 8 oz. mushrooms
- 1 Tbsp. soy sauce
- 1/2 c. cashews
- Saute first 3
- ingredients
- until
- done
- on medium-high (approximately 10 minutes).
- Add
- cream
- cheese
- to
- center of pan, reduce heat and cook
- 5 minutes.
- Stir and blend in cream cheese.
- Set aside.
- In
- same skillet put 2 tablespoons margarine, broccoli, onion,
- mushrooms
- and soy sauce.
- Stir-fry on high approximately 5 minutes just until color of onion/broccoli changes.
- Add in chicken
- and simmer 5 to 10 minutes.
- Stir in cashews if desired.
