Banana Jumbos
- 1/2 cup shortening
- 1/2 cup unsalted butter (softened)
- 1 cup sugar
- 2 eggs
- 1 cup mashed banana (about 3)
- 1 tablespoon lemon juice
- 1/2 cup buttermilk
- 1 teaspoon vanilla
- 3 cups flour
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 cup chopped nuts (optional)
- Mash bananas in a small bowl and add lemon juice.
- Cream shortening, butter, sugar, and eggs; add bananas, buttermilk; add vanilla.
- Sift flour, baking soda and salt together in separate bowl then add to cream mixture.
- Fold in optional nuts.
- Chill dough for one hour.
- Using an ice cream scoop, scoop 12 cookies onto a parchment lined baking sheet.
- Bake at 375 for 10-11 minutes.
- Cool completely on a cookie rack before frosting. Refrigerate frosted cookies.
- Frost with Cream Cheese Frosting:
- 1 lb. powdered sugar.
- 8 oz. cream cheese (softened).
- 1/2 cup butter (softened).
- 1 teaspoons vanilla.
