Garden Zucchini Cheddar Bread
- 1 c. chopped onion
- 1/4 c. margarine
- 2 1/2 c. buttermilk baking mix
- 1 Tbsp. minced parsley
- 1/2 tsp. dried basil leaves
- 1/2 tsp. dried thyme leaves
- 1/4 c. milk
- 3 eggs
- 1 1/2 c. shredded zucchini
- 1 c. shredded Cheddar cheese
- 3/4 c. toasted chopped almonds
- Saute onion in margarine in a skillet until tender.
- Cool slightly.
- Combine with baking mix and next 5 ingredients in a bowl.
- Beat vigorously for 1 minute.
- Stir in zucchini, Cheddar cheese and almonds.
- Spread in a greased and floured 9-inch round baking pan.
- Bake at 400u0b0 for 40 minutes or until a toothpick inserted in the center comes out clean.
- Cool slightly before removing from pan.
- Yield:
- 12 slices.
