Gwen Bradford'S Ranger Cookies
- 1 3/4 c. all-purpose flour
- 1 tsp. baking soda
- 1 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1 c. unsalted butter, softened
- 1 c. granulated sugar
- 1 c. firmly packed light brown sugar
- 2 large eggs
- 1 tsp. vanilla
- 1 c. sweetened flaked coconut
- 1 c. old-fashioned rolled oats
- 2 c. cornflakes, crushed coarse
- Preheat oven to 350u0b0.
- In a bowl, stir together flour, baking soda, baking powder and salt.
- In a large bowl with an electric mixer, cream together butter and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition.
- Add vanilla and gradually stir in flour mixture until combined well. Stir in coconut, oats and cornflakes.
- Drop rounded teaspoons of dough about 2 inches apart onto greased baking sheet.
- Bake cookies in batches in middle of oven until browned lightly, 10 to 12 minutes.
- Transfer to racks to cool.
- Makes about 5 dozen.
