Easy 3-Cheese Lasagna
- 1 (16 oz.) container Ricotta cheese
- 2 Tbsp. dried parsley
- 2 Tbsp. grated Parmesan cheese
- 1 tsp. dried basil
- 1/2 tsp. garlic powder
- 4 c. spaghetti sauce
- 8 lasagna noodles, cooked
- 2 c. shredded Mozzarella cheese
- 2 c. dry cottage cheese
- 1 Tbsp. butter
- 4 eggs, separated
- 1/2 tsp. salt
- 1 Tbsp. sugar
- 1/2 c. flour
- sour cream, bread crumbs, fresh fruit or preserves (optional)
- Force cheese through sieve.
- Rub thoroughly until free from lumps.
- Add butter, egg yolks, salt, sugar and flour.
- Beat thoroughly until light.
- Add well beaten egg whites and fold in carefully.
- Turn out on floured board.
- Roll with hands into long, narrow roll.
- Flatten and cut slantwise into pieces 2 inches long. Cook in salted, boiling water until they rise to the top.
- Lift with straining spoon and cover with lightly browned buttered crumbs, if desired.
- They are delicious with sour cream flavored with cinnamon and sugar or fresh fruit or preserves.
