Champagne-Battered Chicken Nuggets

  1. For the Chicken Nuggets:
  2. In a bowl, add the egg, garlic powder, black pepper, flour, and champagne; whisk thoroughly.
  3. Season cubes of chicken with herbed salt.
  4. Coat the chicken nuggets in the champagne batter.
  5. Cook the nuggets in hot oil, drain/cool.
  6. Place the nuggets in a serving container i.e. little tin buckets.
  7. Garnish with parsley.
  8. For the Aioli Sauce:
  9. Combine, in a small bowl, champagne vinegar, garlic, cayenne pepper, and egg yolk.
  10. Whisk in the olive oil.
  11. Add salt and whisk more.
