Enchilada Casserole
- 4 Tbsp. shortening
- 1 chopped onion
- 1 lb. ground beef
- 36 Doritos corn chips, plus 1 c. corn chip crumbs
- 1 c. grated cheese
- 1 (8 oz.) can enchilada sauce
- 2 (8 oz.) cans tomato sauce
- 1 can water (tomato sauce can)
- salt and pepper to taste
- 1 Tbsp. comino spice
- Take 4 tablespoons shortening and melt in skillet.
- Then add chopped onions and 1 pound ground beef.
- Cook until meat loses red color.
- Then add 36 Dorito corn chips, 1 cup grated cheese, 1 can enchilada sauce, 2 cans tomato sauce and 1 tomato sauce can of water.
- Add salt and pepper to taste and 1 tablespoons comino spice.
- Pour into baking dish (8 x 12-inch), greased.
- Top all ingredients with grated cheese (1 cup) and 1 cup Frito corn chip crumbs.
- Bake at 350u0b0 for 30 minutes.
- Serves 6 to 8.
