Italian Meat Loaf
- 1 1/2 to 2 lb. ground chuck
- 2 beaten eggs
- 1 c. soft bread crumbs (2 to 3 slices)
- 1/2 c. tomato juice
- 2 Tbsp. parsley flakes
- 1/2 tsp. oregano
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1/2 lb. ham, sliced very thin
- 1 pkg. Mozzarella cheese (save 1 slice for top)
- Combine ingredients except ham and cheese.
- Spread mixture on a 10 x 12-inch sheet of wax paper.
- Arrange ham on top, leaving a small space around edge.
- Place cheese on top of ham.
- Starting from short end, roll up jelly-roll style.
- Seal ends and edges. Place seam side down in baking pan.
- Bake at 350u0b0 for 1 1/4 hours. Place rest of cheese on top; cut in triangles.
- Return to oven about 5 minutes until cheese melts.
