Porcupine Meatballs
- 1 lb. ground beef
- 1/2 c. long grain white rice
- 3/4 c. finely chopped onion
- 1 garlic clove, finely chopped
- 1/2 tsp. dried basil leaves
- 1/2 tsp. salt
- 1/4 tsp. ground black pepper
- 1 (10 3/4 oz.) can condensed tomato soup
- 1/2 c. water
- In medium size bowl, combine ground beef, rice, onion, garlic, basil, salt and pepper.
- Form into 1 1/2-inch balls.
- In a 4-quart pressure cooker pan, combine soup and water.
- Heat to boiling over medium-high heat.
- Add meatballs to soup mixture.
- Cover and heat to 15 pounds pressure.
- Cook meatballs 10 minutes.
- Remove from heat and allow pressure to reduce gradually.
- When pressure is completely reduced, remove lid and serve meatballs immediately.
